Chef Cabrona, sous chef at lauded neighboring restaurant Sac-a-Lait, will be taking over the Catahoula kitchen to serve up some inventive, Yucatecan-inspired, panuchos, or black bean filled corn tostadas. If you've ever wanted to try veal brains, this is how to do it. Chef Cabrona will have more accessible options on hand for the less daring, like a vegan squash seed hummus called Sikil-P'ak and venison brisket. Yum!
